Taco Bake

I found this recipe on this blog (click on blog to go to blog) and made it the other night. I am adding this to my recipe aresenal because I thought it was pretty tasty and Rob loved it. I forgot to take pictures of the end result but here are pictures of the work in progress.






Ingredients

* 1 lb ground beef (or ground turkey, or ground chicken - I used turkey)
* 1 packet taco seasoning
* 15 oz. tomato sauce
* 8 oz. seashell pasta (I could only find the smaller ones but the recipe creater says the medium and large are good too)
* 8 oz. package cream cheese, softened in microwave (I used fat free)
* 1/2 cup sour cream (I used a cup)
* 8 oz. shredded sharp cheddar cheese

Directions

1. Brown the meat, drain. Add taco seasoning and tomato sauce. Bring to a boil and then simmer for 20 minutes.
2. In the meantime, cook pasta according to directions. Drain.
3. Mix softened cream cheese and sour cream in separate bowl.
4. Spray bottom of 9x13 pan. Put pasta in bottom of pan.
5. Spread cream cheese mixture over pasta.
6. Spoon ground meat mixture over this.
7. Sprinkle shredded cheese on top.
8. Bake @ 350 degrees for 30 minutes. Let cool 15 minutes before serving.

Sounds yummy - I'm giving it a try. Here is a recipe from WW - and it is Core, yippee! Sounds like a fast and tasty breakfast. Also would be good with herbs like basil, sage, fresh thyme or - ??

Spinach and Cheddar Frittata

A few shortcuts like store-bought shredded cheese and a bag of pre-washed spinach (just rinse at home), make this frittata a tasty, simple meal.


Ingredients
•4 large egg(s)
•2 large egg white(s)
•1 cup(s) spinach, fresh, baby leaves, chopped
•2 tbsp scallion(s), finely chopped
•1/4 tsp table salt
•1/4 tsp black pepper
•1 spray(s) cooking spray
•1/2 cup(s) shredded fat-free cheddar cheese
Instructions
•Preheat oven to 400°F.
•In a large bowl, beat together eggs and egg whites; stir in spinach, scallion, salt and pepper.
•Coat a 12-inch ovenproof nonstick skillet with cooking spray; heat skillet over medium heat. Pour egg mixture into skillet and cook until partially set, about 5 minutes.
•Sprinkle cheese over eggs. Place skillet in oven and bake until cheese softens and eggs firm up, about 5 minutes. Remove from oven and let stand 1 minute before cutting into 8 wedges. Yields 2 wedges per serving.

Mmm, I'll have to try that. Maybe I'll try it tomorrow, I have all the ingredients on hand!
