Followers
Ok- I don't get a lot of comments on my page but I know you readers are out there. How do I know you ask? 1.) you tell me or say "I read on your blog.." and 2.) I have a site tracker so I know how many people are visiting my blog, how often, how long you stay, etc. Anyway, whats my point? I'll tell you: I was playing around and saw that I can have a spot on my page for my "followers". See the panel on the right hand side. So if you are reading this go add yourself. Thanks!

Mmm...Corn
I like corn.
My parents came over the other day so my dad could help us with some stuff around the house and mom wanted to come too because she has not been out lately due to a recent knee surgery. My mom decided to bring a stack of magazines from a few years ago over to go through them to decide what recipes she wanted to keep and then throw out the remainder of the magazine. I decided to look through the discarded recipes and found one I wanted to try.
Rob and I had a BBQ for two on Saturday. Well, technically there were four of us (me, Rob, Buddy and Hannah, the soft wheaten terrier we were dog sitting for our friends Maryanne and Brian who were on their honeymoon). Anywho, Rob made the meat and I made the side. We both really liked the side so I decided to post here. The recipe from Cooking Light says its "a cross between corn bread and corn pudding." It kind of reminded me of the corn stuff at Chevy's but not as sweet and dessert-y.

Corn Fritter Casserole
3 tablespoons butter, softened
3 large egg whites
1 (8 oz) block fat free cream cheese, softened
1/2 cup finely chopped onion
1/2 cup finely chopped red bell pepper (note: I omitted the bell papers. Rob and I both agreed it may not have been as good with it so add with caution)
1 (15 1/4 oz) can whole-kernal corn, drained
1 (14 3/4 oz) can creamstyle corn
1 (14 3/4 oz) can creamstyle corn
1 (8 1/2 oz) package corn muffin mix (Jiffy)
1/4 teaspoon black pepper
Cooking spray
1. Preheat oven to 375 degrees
2. Combine first three ingredients in a large bowl, stirring with a whisk until smoooth. Stir in onion, bell pepper (ew!, oh sorry), whole-kernel corn, and cream-style corn; mix well. Add muffin mix and black pepper, stirring until well combined. Pour into a 11 x 7 inch baking dish coated with cooking spray.

3. Bake at 375 degrees for 50 minutes or until a wooden pick inserted in center comes out clean.

Weddings Galore
I have been crazy at work for awhile working on a comp project so I'm a bit behind on posting these pictures.
On July 26, we attended Nate and Parya's wedding. It was very beautiful. They had a few hundred guests - it was definatley the biggest wedding I have ever been to and my first persian wedding. After the ceremony, the family presented Parya with tons and tons (and I mean tons) of gorgeous jewelry such as necklaces, bracelets, watches, earrings, etc. She was definately blinging. They were serving drinks and food into the wee hours of the night, had a hookah bar and flew in the top pop singer from Iran to perform! We missed the performance because Rob was not feeling well but we heard it was amazing. Here is a picture that I didn't take but I found online - I have my ways...

We attended Maryanne and Brian's wedding on August 9 and it was also a very beautiful wedding. It was held at the Testerossa winery in Los Gatos. I had my camera at this wedding so I have a few more pictures.




Next weddings: Weiher wedding September 13 and DeFalco wedding September 20!

Pool!
Rob and I felt the pool's chemical levels were ok enough to swim in so we went for a dip in the pool this afternoon. Unfortunately (for my neighbors who may be able to see into our yard), I couldn't find my swimsuit so I had to wear underwear and a sports bra. To quote Rob, it was "hot" (with regards to my swim wear).
